We’re very fond of Ashland, with its quaint turn-of-the-century architecture, “health water”–spouting public fountains, and sweet lil’ nonprofit ski hill. Ten minutes outside downtown Ashland sits Lithia Springs Resort, with more than four acres of lush gardens, a koi pond, fountains, gazebos, and a spa. Through February, a Valentine’s package includes a couples aromatherapy massages, chocolate truffles, a bottle of sparkling wine, and rose petal turndown service.

Big-hearted McMinnville is the unofficial capital of Oregon wine country, and there’s no better home base than downtown’s posh but pretense-free Atticus Hotel. Take one of the hotel’s Dutch-style tandem bikes out for a spin, then lounge by your room’s private fireplace in a Pendleton bathrobe. Though destination restaurant Okta closed last September, the city’s food scene still punches far above its weight—try Thistle, Humble Spirit, or Hayward. Mosey through the Granary District, where defunct industrial and farm buildings have been reclaimed by vineyards, breweries, and retailers.
